Garlic Mushroom Bruschetta

Ingredients:
· 6 shallots
· 4 garlic cloves
· 450g mushrooms
· 3 tbsp olive oil
· 100ml dry white wine
· 3 tbsp finely chopped rosemary
· 6 tbsp mascarpone
· 12 slices ciabatta
· Parmesan shavings
· Salt and ground black pepper
KitchenAid mixer attachments needed:
· Rotor vegetable slicer/shredder
· Coarse shredding drum
· Slicing drum
Instructions:
1. Using the coarse shredding drum and the rotor vegetable slicer/shredder, shred the shallots and 3 garlic cloves on speed 4.
2. Then resort to the slicing drum to slice the mushrooms.
3. In a large frying pan with olive oil, stir-fry the shallots and garlic for 5 minutes then fry the mushrooms for 10 minutes until they turn golden brown.
4. Now add the wine and reduce, mix with mascarpone and rosemary, add a pinch of seasoning then remove from the heat.
5. Brown the ciabatta slices and the remaining garlic clove. Brush the toast with garlic then add the mushroom mixture.
6. Sprinkle parmesan shavings on top and voila…
