“Linguine Alla Bottarga” to die for
Kitchenaid mixer attachments needed: spaghetti cutter, rotor vegetable slicer/shredder, and a fine shredding drum.
Ingredients: pasta dough (go up to setting 5), 40 g of bottarga, 120 ml of extra virgin olive oil, ¼ teaspoon of chili flakes, 1 tablespoon of finely chopped parsley, and 2 tablespoons of lemon juice.
First, you need the spaghetti cutter on speed 2 to prepare pasta sheets and leave them to dry for almost 30 minutes. Then lightly dredge them with flour before storing them in an airtight container.
Use the rotor vegetable slicer/shredder and the fine shredding drum to grate the bottarga on speed 4. After heating the olive oil, cook the chili flakes for 1 minute and mix them with the chopped parsley.
Insert the linguine in salted boiling water until they are slightly undercooked then move them to a pan with the flavored oil along with the bottarga. Make sure to cover the pasta with enough oil and bottarga then add some lemon juice.
